Gelato which is Italian for Ice cream is actually very different than ice cream. The three main differences are that Gelato is low in sugar, low in butterfat and is made with very little air.

Back in Roman times Gelato was prepared with snow and honey plus fresh fruit. The first Gelato was invented in Florence in the 16th century for the Medici family.

Later on the first Gelato shop was opened in France by the Sicilian Chef Francesco Procopio De Coltelli. Another Italian immigrant from Genova opened the first Gelato shop in New York a few years later followed by an Italian from Venice Signore Sartelli who opened the first Gelato shop in London. Another Italian from Napoli, Signore Tortoni, invented the gelato between two biscuits.
